Easy Beef Udon Recipe with Tomato & Marble Beef

Isn't it unsurprising that I'm adding tomatoes and beef to a tomato beef udon? Yup! They really go well together, LOL.

For this recipe, I used marble beef slices as they are much more tender and melt-in-your-mouth. You can use any type of tomato, but I specifically picked cherry tomatoes for their sweetness. Plus, big slices of tomato will dissolve into the broth after boiling for 8 minutes, so if you want to actually eat the tomatoes, using whole, tiny cherry tomatoes is the way to go! Chinese lettuce is perfect for this broth given its neutral taste that easily soaks up the soup, and onion slices add sweetness and extra complexity to the broth.

  • 1 package Nissin Demae Iccho Bar Udon
  • Marble beef slices (desired amount)
  • Cherry tomatoes (desired amount)
  • Chinese lettuce (desired amount)
  • Onion slices (desired amount)
  • 600ml Water

🍳 Step-by-Step Cooking Instructions

  1. Prep the Broth: Bring 600ml of water to a boil in a one-man clay pot (or small saucepan) over high heat. Add only the soup powder package and stir well to create the broth base.
  2. Boil the Udon: Once the broth is bubbling, turn the heat down to medium-low. Gently add the bar udon and let it simmer for 3 minutes.
  3. Add the Sweetness: After 3 minutes, toss in your cherry tomatoes and let them simmer alongside the noodles for another 3 minutes.
  4. Toss in the Fresh Elements: After a total of 6 minutes, add the Chinese lettuce, onion slices, and marble beef slices directly into the simmering broth. Gently flip the beef slices a few times so they cook through evenly.
  5. The Finishing Touch: Pour the seasoning sauce packet into the pot, stir well to combine all the delicious flavors, and you're done! Turn off the heat and serve immediately.

💡 Chef's Quick Tip

Thinly sliced marble beef cooks incredibly fast! Keep a close eye on it in Step 4 and turn off the stove as soon as the pink color fades to a light brown. The residual heat from the clay pot will finish cooking it perfectly, keeping the meat incredibly tender and juicy.
