Ingredients
For the One-Pot Ramen
- ½ pack Nissin Demae Iccho Kyushu Tonkotsu Bar Noodle (1 bundle out of the 2-serving pack)
- 450 ml Water
- 3–4 slices Pork belly rolls (paper-thin)
- ½ cup Brown shimeji mushrooms (roots removed, stems separated)
- 2 tbsp Green onions (finely chopped)
- 1 Ajitsuke Tamago (Soy-marinated soft-boiled egg, halved)
- 1 tbsp Menma (Seasoned bamboo shoots)
- 2 sheets Nori (Toasted seaweed)
For the Marinated Eggs (Ajitsuke Tamago)
- 4 Large eggs (cold, directly from the fridge)
- 1 tbsp Rice vinegar
- ½ cup Soy sauce
- ½ cup Water
- ¼ cup Mirin
- 1 tbsp Sugar
Step-by-Step Instructions
Step 1: Prep the Jammy Soy-Marinated Eggs
(Tip: Make these ahead of time for the ultimate flavor!)
- Make the Marinade: In a small saucepan, combine soy sauce, water, mirin, and sugar over medium heat. Stir until the sugar dissolves. Remove from heat and let it cool completely.
- Boil the Eggs: Bring a pot of water to a rolling boil and stir in 1 tbsp of rice vinegar. Gently lower cold eggs into the water and boil for exactly 6 minutes and 30 seconds.
- Ice Bath & Peel: Immediately transfer eggs into a bowl filled with ice water for 10 minutes to stop the cooking process. Peel gently under running water.
- Marinate: Place peeled eggs in a glass jar, submerge them in the cooled marinade, and refrigerate for 4 to 12 hours.
Step 2: Cook Everything in One Pot
- Build the Broth: Add 450 ml of water and half of the Nissin Demae Iccho soup base packet into your cooking pot. Bring to a boil over medium-high heat.
- Simmer Mushrooms: Add the prepared shimeji mushrooms directly to the bubbling broth and simmer for 1.5 minutes.
- Cook Bar Noodles: Drop 1 bundle of straight bar noodles into the pot. Cook for 1.5 minutes, gently loosening them with chopsticks or tongs.
- Flash-Cook Pork Belly: Lay the paper-thin pork belly slices straight into the boiling broth. Cook for 30 to 45 seconds until opaque and cooked through. Remove the pot from heat.
Step 3: Garnish & Serve Directly from the Pot
- Slice one marinated egg in half.
- Arrange the menma, green onions, and jammy egg halves directly over the noodles inside the pot.
- Drizzle half of the included aromatic black garlic/seasoning oil packet over the top.
- Tuck toasted nori sheets along the rim of the pot and dig in straight from the pot while piping hot!
