Char Siu Lo Mein, Cantonese Style
I love making quick meals with shrimp-egg, egg or scallop dried noodles. It’s so easy, simple, relatively healthier, not of course yummy!
This one is my favorite - Ginger and scallion lo mein topped with Char Siu and cabbage.
Ingredients
- Char Siu (Barbecue pork slices), as much as you like
- Ginger, 2 thumbs, peeled and minced
- Scallion, 1, chopped
- Naba cabbage, leaves only, cut into bite size, as much as you like
- Sau Tao Dried Noodle, 1, any kind - shrimp, egg or scallop
Seasonings
- Salt, a few shakes
- Oyster Sauce, 1 tsp
- Soy Sauce, 1 tsp
Easy 4 steps
- Put a serving of your choice of dried noodle into a small pot, pour over warm temperature water, just covering the noodles, bring the water to boil. Once it boils, start loosening the noodle gently, once it’s all loosen up, it takes about 2 minutes, put them into a bowl. Season it with oyster sauce and soy sauce.
- Stir fry chopped scallion and minced ginger in medium high heat in an oil pan or pot. Season with a few shakes of salt. Once you see the scallion starts to brown on the edges. It’s done. Pour it over the seasoned noodles, Mix them well.
- Use the same pan or pot you used to fry the scallion and ginger to reheat the char siu pieces, place them on top of the noodles.
- Afterwards, in the same pan or pot, stir fry the cabbage, season with a few shakes of salt. Then place them on top of the noodle. Then you’re all done!
